INGREDIENTS:
- 8 chicken drumsticks
- 255g Street Kitchen Kashmiri Tikka Masala kit
- 2 tablespoons vegetable oil
- 1 cup basmati rice
- 225g can pineapple pieces in juice
- 1/3 cup toasted shredded coconut
- 2 long green chillies, deseeded, thinly sliced
- Coriander sprigs, to serve
- Extra sliced green chillies, to serve
- Fresh limes, halved, to serve
INSTRUCTIONS:
- In a large bowl, combine the chicken drumsticks with the garlic and ginger paste provided in the Tikka Masala kit.
- Heat vegetable oil in a large non-stick frying pan over medium heat. Add the Tikka spice mix from the kit and cook for 1 minute, allowing the spices to release their flavors. Add the marinated chicken drumsticks and cook for about 8 minutes, turning occasionally, until they are browned on all sides.
- Pour the sauce from the Tikka Masala kit over the chicken, along with 1/2 cup of water. Bring the mixture to a boil, then reduce the heat, cover the pan, and simmer for 15 minutes, or until the chicken is cooked through and tender.
- While the chicken is cooking, rinse the basmati rice until the water runs clear. Place the rice in a saucepan. Drain the pineapple pieces, reserving the juice. Set the pineapple pieces aside. Add the reserved pineapple juice and 1 2/3 cups of water to the rice. Place the saucepan over high heat and bring the mixture to a boil. Simmer until small craters form in the rice. Reduce the heat to low, cover the pan, and cook for an additional 3 minutes. Remove the pan from the heat and let it stand for 5 minutes. Fluff the rice with a fork and stir in the toasted shredded coconut and sliced green chilli. Gently fold in the reserved pineapple pieces. Season the rice with salt and white pepper to taste.
- To serve, arrange the Tikka Masala Chicken Drumsticks on a plate alongside the fragrant Pineapple and Coconut Rice.
