  • 600g tray (4) chilled Steggles Panko & Quinoa Chicken Breast Schnitzel
  • 1/3 cup low-fat Greek-style natural yogurt
  • 1 tablespoon lemon juice
  • 2 teaspoons chopped dill
  • 1 clove garlic, crushed
  • 8 iceberg lettuce leaves, trimmed
  • 350g packet kale slaw mix
  • 3/4 cup grated tasty cheese
  • 2 gherkins, sliced
  • Lemon wedges, to serve

 

INSTRUCTIONS:

  1. Preheat the oven to 210°C (190°C fan forced). Place the chicken schnitzels on an oven tray and bake them, turning halfway through cooking, for about 18 minutes or until they turn golden brown and are fully cooked.
  2. Once the chicken schnitzels are done, remove them from the oven and let them rest for 5 minutes.
  3. In a large bowl, whisk together the low-fat Greek-style yogurt, lemon juice, chopped dill, and crushed garlic to create a flavorful yogurt dressing.
  4. Arrange the iceberg lettuce leaves in serving bowls, creating a cup-like shape.
