INGREDIENTS:
- 3/4 cup cream cheese, softened
- 1/4 cup butter, softened
- 1/2 cup strawberries, fresh or frozen
- 1 Tbsp pure vanilla extract
- 10–15 drops liquid Stevia
INSTRUCTIONS:
- In a mixing bowl, place the butter and the cream cheese and eave at room temperature (about 45min) until softened. Do not microwave the butter!
- In a separate bowl place the strawberries and mash using a fork.
- Add the liquid Stevia and vanilla extract and mix well. Add the strawberries to the bowl with softened butter and cream cheese. Whisk until all ingredients are well combined.
- Pour the strawberry mixture into muffin silicon molds. Place in the freezer for about 3-4 hours.
- Before serving, unmold the strawberry muffins and place on a serving dish. Keep refrigerated.
