INGREDIENTS:

  • 500g chicken breast fillets
  • 2 garlic cloves
  • 2 avocados
  • 1/2 bunch basil, leaves picked, roughly chopped
  • 1/2 cup finely grated parmesan
  • 1 lemon, finely grated rind and juice
  • 1/4 cup olive oil, plus extra for drizzling
  • Sea salt flakes and white pepper
  • 500g cherry truss tomatoes
  • 400g fettuccine pasta
  • Finely grated or shaved parmesan, for serving
  • 1/3 cup small basil leaves, for serving

 

INSTRUCTIONS:

  1. Start by poaching the chicken. Place the chicken breast fillets into a deep frying pan and cover with cold water. Over medium heat, bring the water to a simmer and cook for about 10 minutes. Once cooked, remove the chicken from the heat and let it cool in the water. Drain the chicken and shred it into bite-sized pieces.
  2. In a food processor, combine peeled garlic cloves, avocados, roughly chopped basil, finely grated parmesan, lemon rind and juice, and olive oil. Season with sea salt flakes and white pepper. Puree the ingredients until a smooth green sauce forms, creating a luscious avocado pasta sauce.
  3. Preheat your oven to 180°C (356°F). Line a baking tray with baking paper. Place the cherry truss tomatoes onto the tray and drizzle them with olive oil. Season with salt and pepper. Roast the tomatoes for approximately 15 minutes, or until they soften and develop a rich flavor.
  4. While the tomatoes are roasting, cook the fettuccine pasta in a large saucepan of salted boiling water. Follow the instructions on the packet for cooking time. Once the pasta is just tender, drain it and return it to the saucepan. Add the shredded chicken and the prepared avocado sauce to the pasta. Toss the ingredients until they are well combined, ensuring the pasta is coated with the creamy sauce.
  5. To serve, divide the Chicken Fettuccine with Creamy Avocado Pasta Sauce among serving plates. Top each portion with finely grated or shaved parmesan and scatter small basil leaves over the top. Complete the dish by arranging the roasted tomatoes around the pasta.
