INGREDIENTS:

  • 2 large Lebanese flatbreads
  • 4 tbs tomato paste
  • 2 x 80g packets Primo Thinly Sliced Danish Salami
  • 100g grape or cherry tomatoes, halved
  • 100g fresh ricotta, crumbled
  • Olive oil cooking spray
  • Rocket leaves & extra virgin olive oil, to serve

 

INSTRUCTIONS:

  1. Preheat your oven to 200°C (392°F) fan-forced. Place the Lebanese flatbreads onto baking trays, creating a perfect canvas for your delicious pizzas.
  2. Take 2 tablespoons of tomato paste and spread it evenly over each flatbread, creating a rich and flavorful base for your toppings.
  3. Divide the ingredients among the flatbreads, ensuring an even distribution. Top each flatbread with the tantalizing Danish Salami, placing the slices to your liking. Scatter the halved grape or cherry tomatoes across the flatbreads, adding vibrant color and juicy freshness.
  4. Sprinkle the crumbled fresh ricotta over the salami and tomatoes, infusing the pizzas with a creamy and luxurious texture.
  5. Give the pizzas a light spray of olive oil cooking spray, ensuring they will bake to a perfect crispness in the oven.
  6. Bake the pizzas in the preheated oven for approximately 10 minutes, or until the flatbreads turn golden and crisp.
  7. Once out of the oven, elevate the flavor profile by scattering a handful of peppery rocket leaves over each pizza. Season with a touch of salt and pepper to enhance the taste.
