Easy Avocado Parmigiana

Indulge in a delightful twist on the classic Parmigiana with this Easy Avocado Parmigiana recipe. Tender chicken breast fillets are coated with a golden crust of breadcrumbs and then topped with creamy avocado and melted Swiss cheese. This dish elevates the traditional flavors you love while adding the wholesome goodness of avocado. INGREDIENTS:

  • 4 chicken breast fillets
  • 1/3 cup plain flour
  • 2 eggs, lightly whisked
  • 1 cup Panko breadcrumbs
  • Olive oil, for shallow frying
  • 2 tbs Dijon mustard
  • 1 just-ripe avocado, skin and seed removed, sliced
  • 4 slices Swiss cheese

 

INSTRUCTIONS:

  1. Begin by preheating your oven to 200°C (392°F) or 180°C (356°F) fan-forced. Grease and line a baking tray with baking paper, ensuring a non-stick surface for your delicious Avocado Parmigiana.
  2. Place one chicken breast fillet between two sheets of baking paper. Using a rolling pin, gently flatten the chicken until it reaches a thickness of approximately ½cm. Repeat this process for the remaining chicken breast fillets.
  3. To coat the chicken, start by dredging each fillet in plain flour, shaking off any excess. Dip the floured chicken into the lightly whisked eggs, ensuring an even coating. Then, press the chicken into the Panko breadcrumbs, making sure both sides are coated generously.
  4. In a non-stick frying pan, add enough olive oil for shallow frying. Heat the oil over medium-high heat. Once the oil is hot, add the coated chicken fillets and fry for about 2 minutes on each side, or until they turn a beautiful golden brown. Transfer the fried chicken to the prepared baking tray.
  5. Spread a generous layer of Dijon mustard over the top side of each chicken fillet.
  6. Now, it’s time to assemble the Avocado Parmigiana. Place slices of just-ripe avocado on top of the mustard-coated chicken fillets. Then, lay a slice of Swiss cheese over each avocado-topped chicken piece.
  7. Slide the baking tray into the preheated oven and bake for approximately 7-8 minutes, or until the cheese has melted completely and the chicken is cooked through.
  8. Once out of the oven, serve the delectable Easy Avocado Parmigiana alongside a simple salad of your choice. The freshness of the salad complements the rich flavors of the dish perfectly.
