Chicken and Prawn Pad Thai

INGREDIENTS:

  • 375g pad Thai rice noodles
  • 2 tablespoons vegetable oil
  • 255g Street Kitchen Pad Thai kit
  • 16 green prawns, peeled, deveined
  • 500g chicken thigh fillets, diced
  • 2 eggs, whisked
  • 5 green onions, thinly sliced diagonally
  • 1 cup bean sprouts, trimmed
  • Small red chillies, thinly sliced, to serve
  • Thai basil, to serve

 

INSTRUCTIONS:

  1. Begin by cooking the pad Thai rice noodles according to the instructions on the packet. Drain and set aside.
  2. Heat 1 tablespoon of vegetable oil in a hot wok. Add the chili & onion mix from the Pad Thai kit along with the peeled and deveined prawns. Cook for about 3 minutes or until the prawns are just cooked. Transfer the prawns and chili & onion mix to a bowl.
  3. In the same wok, add the diced chicken thigh fillets. Cook for approximately 5 minutes, or until the chicken is browned and cooked through. Transfer the cooked chicken to the same bowl as the prawns.
  4. Heat the remaining oil in the wok. Pour in the whisked eggs and cook for about 1 minute or until they are just set. Add the thinly sliced green onions and stir until everything is well combined.
  5. Return the cooked chicken, prawns, and rice noodles to the wok. Pour in the Pad Thai sauce from the kit and toss everything together until well combined and heated through.
  6. Remove the wok from the heat and stir in the finishing sauce from the kit, as well as the bean sprouts. The heat from the cooked ingredients will gently warm and meld the flavors of the sauces.
  7. To serve, spoon the Chicken and Prawn Pad Thai into individual serving bowls. Top with small slices of red chili for a touch of heat, and garnish with fresh Thai basil leaves, adding a fragrant and aromatic element to the dish.
