INGREDIENTS:

  • 1 1/4 cups (295 ml) water
  • 1/2 cup (92 g) cracked freekeh
  • 1 tablespoon (7 g) ground flaxseed
  • Generous pinch of fine sea salt
  • 1 tablespoon (15 g) organic ketchup
  • 2 teaspoons (5 g) onion powder
  • 1 teaspoon paprika
  • 1/4 to 1/2 teaspoon ground fennel seeds
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon rubbed sage
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon pure maple syrup
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon ground cayenne (optional), or more to taste
  • Nonstick cooking spray, for cooking
  • High heat neutral-flavored oil, for cooking

 

INSTRUCTIONS:

  1. In a small saucepan, combine the water, cracked freekeh, ground flaxseed, and a pinch of fine sea salt. Bring the mixture to a boil, then reduce the heat to a simmer. Cook for 20 to 25 minutes, stirring frequently, until the mixture becomes very thick. It should easily stay on one side of the pot when stirred to that side. Remove the saucepan from the heat.
  2. Stir in the organic ketchup, onion powder, paprika, ground fennel seeds, garlic powder, rubbed sage, ground black pepper, pure maple syrup, dried thyme, and ground cayenne (if using) into the freekeh mixture.
  3. Heat a thin layer of neutral-flavored oil in a large skillet over medium heat.
  4. Crumble the sausage mixture into the skillet and cook until browned, stirring occasionally. This should take about 10 to 14 minutes.
