INGREDIENTS:

  • 2 tablespoons peanut oil

  • 1/4 cup sweet chili sauce
  • 2 tablespoons fish sauce
  • 2 tablespoons soy sauce
  • Juice of 1 lime, plus extra wedges to serve
  • Thai basil leaves and coriander leaves, to serve

PREPARATIONS:

  1. Heat peanut oil in a wok over medium-high heat.
  2. Stir-fry the sliced red onion for 2-3 minutes until softened.
  3. Add the crushed garlic, finely grated ginger, sliced red chili, and brown sugar. Cook for an additional minute until fragrant.
  4. Incorporate Lilydale Free Range Chicken mince into the wok and cook, using a wooden spoon to break up lumps, for 10 minutes or until browned.
  5. Introduce the thinly sliced red capsicum and cut green beans, and stir-fry for about 2 minutes until the vegetables are tender.
  6. Add the cooked and cooled jasmine rice, along with sweet chili sauce, fish sauce, soy sauce, and lime juice. Continue to stir-fry for 3 minutes until all ingredients are heated through.
