  • 6 slices (5mm thick) Sweet Potato, skin on
  • 1 avocado, mashed
  • 3/4 cup baby spinach leaves
  • 1 cup shredded BBQ chicken
  • 1/4 cup aioli

PREPARATIONS:

  1. Preheat the oven to 200°C/180°C fan-forced. Line an oven tray with baking paper.
  2. Arrange sweet potato slices on the tray. Spray with oil and season to taste.
  3. Bake the sweet potato slices for 10-15 minutes until they turn golden and tender.
  4. Spread each toast with mashed avocado.
  5. Top the avocado with a layer of baby spinach leaves.
  6. Pile on shredded BBQ chicken over the spinach.
  7. Drizzle the aioli over the chicken.

  1. Preheat the oven to 200°C/180°C fan-forced. Line an oven tray with baking paper.
  2. Arrange sweet potato slices on the tray. Spray with oil and season to taste.
  3. Bake the sweet potato slices for 10-15 minutes until they turn golden and tender.
  4. Arrange a variety of chopped tomatoes over each sweet potato slice.
