  • CARAMELIZED ONIONS:
    • 2 tablespoons unsalted butter
    • 2 red onions, sliced 1/4 inch thick
    • 1/2 teaspoon salt
    • 1 tablespoon sherry vinegar
  • CHERRY TOMATO JAM:
    • 6 ounces dry-cured Spanish chorizo, finely chopped
    • 1 shallot, finely chopped
    • 1 pound cherry tomatoes
    • 1 teaspoon fresh marjoram leaves
    • 1 teaspoon fresh thyme leaves
    • 1/2 cup dried currants, soaked and chopped
    • 2 teaspoons sherry vinegar
    • 1/2 teaspoon packed brown sugar
    • 1/4 teaspoon salt
  • QUICK AIOLI:
    • 1 cup mayonnaise
    • 3 tablespoons extra-virgin olive oil
    • 1 clove garlic, crushed
    • Grated zest and juice of 1 lemon
  • QUICK PICKLES:
    • 1 English cucumber, sliced 1/8 inch thick
    • 2 teaspoons salt
    • 3 tablespoons fresh chopped dill
    • 1 cup rice wine vinegar
    • 1/2 cup water
  • FRIED POTATOES:
    • 2 pounds russet or Kennebec potatoes, unpeeled
    • 4 cups olive or peanut oil
    • Salt and freshly ground pepper
    • 1 cup fresh sage leaves
    • 1/2 cup fresh marjoram leaves
  • BEEF PATTIES:
    • 2 1/2 pounds ground grass-fed beef (20% fat)
    • 1 1/2 teaspoons salt
    • 1/2 teaspoon freshly cracked pepper
    • 8 ounces Comté cheese, sliced
    • Unsalted butter, softened
    • 2 avocados, sliced
    • 2 heads Little Gem or iceberg lettuce

 

PREPARATIONS:

  1. Form brioche dough into bun shapes and let rise.
  2. Brush dough with egg wash, top with seeds, and bake.
