I adore steak, I adore guacamole, and the combination is fantastic.
YIELD: The number of servings will depend on the size of your steak, but the guacamole will add 4 grams of carbohydrates and 1 gram of fiber, for a total of 3 grams of usable carbs. You’ll also get 275 milligrams of potassium
INGREDIENTS:
- Olive oil
- 1 1/2 to 2 pounds well-marbled steak (sirloin, rib eye, or the like), 1 to 1 1/2 inches thick
- Guacamole
- Salt and pepper
GUAGAMOLE:
- 4 ripe black avocados
- 2 tablespoons minced sweet red onion
- 3 tablespoons lime juice
- 3 cloves garlic, crushed
- 1/4 teaspoon Tabasco
- Salt or Vege-Sal to taste
INSTRUCTIONS:
- Halve the avocados, and scoop the flesh into a mixing bowl. Mash coarsely with a fork.
- Mix in the onion, lime juice, garlic, Tabasco, and salt, stirring to blend well and mashing to the desired consistency.
- Prepare the Steakhouse Steak to your preferred degree of doneness.
- Spread each serving of steak with a heaping tablespoon of guacamole, and salt and pepper to taste.
