Ingredients
- 3 lb boneless, skinless chicken thighs
- Sea salt and black pepper
- 6 cloves of garlic, sliced
- ¾ cup balsamic vinegar
- 1 lb grape or cherry tomatoes
- 2 Tbs coconut sugar
- 15-20 large basil leaves, julienned
- Balsamic vinaigrette to serve on the side, if desired
Instructions
1. Season chicken with salt and pepper and place in slow cooker.
2. Add garlic, vinegar, tomatoes and coconut sugar and stir a bit until the
chicken is coated.
3. Cook on low heat for about 6 hours, or until the chicken is cooked through
and it easily falls apart.
4. Remove chicken and tomatoes to a platter, shred the chicken with 2 forks
and smash some of the tomatoes. Stir in basil. Serve some balsamic
vinaigrette on the side if you like.
