Seaweed Rolls

Seaweed Rolls, known as Kimbap in Korean cuisine, are a delightful and versatile snack that resembles sushi at first glance but typically do not include raw fish. Instead, these Korean rice rolls feature a variety of seasoned vegetables, egg, meat, and/or imitation crabmeat as fillings. The beauty of kimbap lies in its adaptability—it’s like a Korean version of a sandwich, where you can customize the filling to suit your dietary preferences, palate, or occasion. Whether you prefer a classic combination or want to get creative with unique flavors, these seaweed rolls are perfect for picnics, lunchboxes, or simply as a tasty snack. INGREDIENTS

  • 2 teaspoons toasted sesame oil
  • 2 teaspoons salt
  • 2 cups cooked rice, cooled
  • 4 sheets nori (dried seaweed)

Traditional Fillings (Choose 1 or more):

  • 1 carrot, julienned, quickly stir-fried with a pinch of salt
  • 2 small cucumbers, seeded and cut into long strips, quickly stir-fried with a pinch of salt
  • 2 eggs, whisked and cooked into a flat omelet, then cut into long strips
  • ¾ cup cooked beef (bulgogi)
  • ½ pound of spinach, blanched
  • ½ cup yellow pickled radish (called danmuji or takuan), cut into strips
  • Imitation crab
  • Fish cake

 

PREPARATIONS

  1. Stir the sesame oil and salt into the cooled rice.
  2. Lay the dried seaweed sheets shiny-side down on a bamboo sushi roller or a piece of aluminum foil.
  3. Spread about ½ cup rice over two-thirds of the seaweed, leaving the top one-third bare. Moisten your fingers or a spoon to prevent the rice from sticking as you pat it down.
  4. Lay your choice of fillings in a horizontal line about one-third of the way up from the bottom of the seaweed.
  5. Roll the kimbap up from the bottom (like a jelly roll), pressing down to keep the roll tight and the fillings inside. As you roll, pull down toward the ends of the bamboo mat.
  6. Spread a tiny dab of water along the top seam to seal the roll together. Set the roll aside and repeat to make the other rolls.
  7. To serve, cut each roll into 7 or 8 rounds.
