INGREDIENTS:

  • 1 tablespoon olive oil
  • 4 skinless salmon fillets (about 170g each)
  • 1 bunch broccolini, trimmed

 

Lemon Butter Sauce:

  • 1/2 cup dry white wine
  • 2 tablespoons lemon juice
  • 1 egg yolk
  • Rind of 1 lemon, finely grated
  • 200g Western Star Original Salted Butter, chilled and cubed
  • 1-2 tablespoons chopped fresh herbs (chives, parsley, etc.)
  • White pepper, to taste

 

INSTRUCTIONS:

  1. Begin by heating 1 tablespoon of olive oil in a frying pan over medium-high heat. Place the skinless salmon fillets in the pan and cook for about 3 minutes. Carefully turn the fillets, cover the pan, and continue to cook for an additional 3-4 minutes, or until the salmon is cooked through and flakes easily.
  2. While the salmon is cooking, let’s prepare the luscious Lemon Butter Sauce. In a small frying pan, bring the dry white wine, lemon juice, and finely grated lemon rind to a gentle boil. Allow the mixture to simmer for 20-30 seconds, or until the liquid is reduced by approximately half.
  3. In a medium bowl, whisk the egg yolk for 1 minute until it becomes smooth and pale. Gradually begin to pour the reduced liquid into the egg yolk while whisking continuously until fully combined. Transfer the mixture back into the frying pan.
  4. Place the frying pan over low heat and begin to whisk in the chilled and cubed Western Star Original Salted Butter, one cube at a time. Continue whisking gently until the butter is completely incorporated, ensuring not to boil the sauce. The result should be a lusciously thick and creamy sauce. Finally, whisk in the chopped fresh herbs and season with a sprinkle of white pepper for a delicate kick.
  5. In a separate pot, steam the broccolini for about 3 minutes, or until they are just tender.
  6. To assemble, place the seared salmon fillets on individual plates. Drizzle the indulgent Lemon Butter Sauce generously over the salmon. Arrange the tender broccolini alongside the salmon, creating a harmonious balance between the rich flavors and the vibrant freshness of the dish.
