One of the Southern favorites, Red eye gravy with its trademark flavor is the best addition to any breakfast. Made with brewed coffee and juices of cooked ham it is great with grits, biscuits or ham. It might sound unusual but it tastes great. It tends to have rich, dark and salty taste.
It is known by many names such as red ham gravy, bird-eye gravy and cedar gravy. The name red-eye gravy is actually referred to the reddish circle of liquid fat that is formed on surface of gravy. In some variations of this recipe, butter or lard is added to develop the sauce which is not necessary. Ham with enough fat produces drippings that are more than enough to develop this sauce.
Blend of coffee with a touch of ham drippings and beef bone broth, you get an incredible gravy that goes well with biscuits, grits, mashed potatoes or ham. Save the drippings from cooked ham slices that you probably made for breakfast. Add in butter and let it deglaze the skillet. Whisk in flour and add beef bone broth, pour the coffee and let cook. Season with salt and sugar. Let the sauce thicken and the remove from heat and serve this incredible, super easy and quick sauce.

Ingredients:
- 2 tablespoon salted butter
- 3 tablespoon all-purpose flour
- 1 cup beef bone broth
- 1/2 cup brewed coffee
- 1/2 teaspoon granulated sugar or honey
- 1 pinch salt
Instructions:
- Place your skillet with juices from cooked ham in it over medium heat. Add butter and let it melt.
- Add flour while constantly whisking until it turns to color of peanut butter.
- Slowly add small amount of beef bone broth at a time and whisk constantly.
- Pour coffee slowly and whisk continuously until the mixture smoothens.
- Season the gravy with sugar and salt and whisk it again.
- Now let the gravy cook until it thickens and whisk occasionally. It will take about 25 minutes.
- Serve the sizzling hot gravy over ham or biscuits.
Note: Leftover red eye gravy can be stored in sealed container for up to 4 days in refrigerator. To freeze the gravy, let it cool completely the store in a freezer bad or sealed contained. You can freeze this gravy for up to 4 months.
