Fried grits or grit cakes is a classic Southern recipe. You can enjoy these golden brown cheesy bites during any meal of the day or even as appetizer.
Grits are a creamy porridge made from coarse cornmeal and these are nutritious Southern staple. Fried grits are cooked grits and dredged in breading mixture for extra crispy outside. Breading mixture is made of breadcrumbs and seasonings. A separate egg-milk mixture is also prepared. Cooked grits are shaped into round cookies using a cookie cutter and dipped in egg mixture followed by coating with breadcrumbs. These grit cakes are then fried until the color changes to golden brown. If you are serving these fried grits for breakfast, you can serve with eggs or fried bacon. For lunch or dinner serve with creamy shrimps, coleslaw or guacamole. These crunchy cakes also go great with soups or stews.
For this recipe you can use either stone-ground or quick-cooking grits but make sure you cook them completely. Flavored with cheddar, these fried grits are a treat. Try this recipe for crunchy savory grit cakes.

Ingredients:
- 2 cups milk to simmer with water.
- 2 cups water
- ¼ teaspoon salt
- 1 cup instant grits
- ½ teaspoon pepper
- ½ cup shredded sharp cheddar cheese
- 3 eggs
- 2 tablespoons milk
- 2 cups breadcrumbs
- 1 tablespoon Creole seasoning
- oil
Instructions:
- Place a saucepan over medium heat and milk, water and salt in it.
- Let the milk simmer then reduce the heat and add grits. Cover the pan and cook for about 5 minutes until it thickens.
- Now remove from heat and add shredded cheese and pepper. Stir until well combined.
- Spread this mixture into a baking dish and chill for 3 hours.
- Then heat the oil in skillet over medium heat.
- Take a shallow bowl and whisk together the eggs and 2tbsp milk.
- In another bowl mix together the crumbs and seasoning.
- When the grits are cold and firm, use a round cookie cutter to cut out grits.
- Dip each grit in egg mixture then breadcrumb mixture and coat each grit.
- Heat about ½ inch of oil in a frying pan and place coated grits in oil for frying and let the color change to golden brown on each side. It takes about 2-3 minutes each side.
- Take out grit cakes on paper napkin. Serve and enjoy.
Note: You can refrigerate the leftover fried grits.
