INGREDIENTS:
- 1 cut up broiler-fryer
- 1/4 cup Ranch Dressing
RANCH DRESSING:
- 1 cup mayonnaise
- 1 cup buttermilk
- 2 tablespoons finely chopped green onions
- 1/4 teaspoon onion powder
- 2 tablespoons minced fresh parsley
- 1 clove garlic, crushed
- 1/4 teaspoon paprika
- 1/8 teaspoon cayenne powder or a few drops of Tabasco
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
INSTRUCTIONS:
- Dressing: Combine all ingredients well, and store in the refrigerator, in a container with a tight-fitting lid.
- Chicken: Preheat the oven to 375°F.
- Arrange the chicken in a roasting pan, and spoon the dressing over it, smearing it a bit with the back of the spoon to cover each piece. Roast for 75 to 90 minutes.
