Preparation time 75 minutes     Total time: 75 minutes

Ingredients:

  • 2 ½ cups all-purpose flour,  plus extra for rolling
  • 1 cup (8 ounces) unsalted butter, very cold, cut into 1/2 inch cubes
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 6 to 8 tablespoons ice water
  • 1 tablespoon heavy cream, half and half, or milk
  • 1 large egg yolk

Instructions:

  • Take bowl of a food processor and add flour, sugar and salt in it. Pulse a couple time to mix.
  • Add half of the butter in processor and pulse several times. Now add the rest of the butter and pulse again until butter cubes become smaller in size.
  • Start adding ice water 1 tablespoon at a time and pulse 2-3 times. The mixture is ready when crumbly dough holds together in your hand.
  • Empty the mixture on to a clean and dry surface.
  • Gather the mixture in 2 equal mounds and use your hands to knead each mound to form a disc. Do not over knead. Make sure the dough holds together without cracks.
  • Sprinkle the disc with flour and wrap in a plastic wrap and keep in refrigerator for 1 hour.
  • After removing dough from refrigerator let it sit for few minutes.
  • Use a rolling pin and roll the dough on a floured surface to 12 inch circle.
  • Carefully place it onto a pie plate and gently press the pie dough so that it lines the bottom and sides of pie plate.
  • Add your filling.
  • Roll the second disc and place it on top of the filling. Use kitchen shears to trim excess dough. Fold the edge of the top piece of dough over and under the edge of the bottom piece of dough, pressing together. Make 2 inch long cuts on top so that steam can escape.
  • Beat the egg yolk with cream and brush the surface of pie.
  • Bake your pie and serve.
