Ingredients

  • ¼ cup whole millet
  • ¹⁄₃ cup bulgur wheat
  • ¼ cup polenta
  • 1½ cups boiling water
  • ¼ cup honey
  • 4 tablespoons unsalted butter, cut into pieces
  • 2²⁄₃ cups bread flour
  • ²⁄₃ cup whole wheat flour
  • ¹⁄₃ cup medium rye flour
  • ¹⁄₃ cup rolled oats
  • 3 tablespoons bran
  • 2 tablespoons gluten
  • 2 teaspoons salt
  • 1 tablespoon plus 1 teaspoon SAF yeast or 1 tablespoon plus 1½ teaspoons bread machine yeast

Preparations

  1. In a bowl, combine the millet, bulgur wheat, polenta, boiling water, honey, and butter. Allow the mixture to soak for 15 minutes. This step softens the grains, melts the butter, and cools the mixture to a warm temperature.
  2. In your bread machine’s pan, place all the ingredients according to the manufacturer’s recommended order. Add the soaked grains along with their soaking liquid as part of the liquid ingredients.
  3. Choose the Basic or Whole Wheat cycle and set the crust to dark. Initiate the baking process by pressing the Start button. Note that the Delay Timer feature is not suitable for this recipe.
  4. Once the baking cycle completes, promptly remove the bread from the pan and transfer it to a cooling rack. Allow the loaf to cool to room temperature before indulging in its rustic goodness.
