Ingredients

  • 1½ heaping tablespoons raw amaranth seeds
  • ¾ cup water
  • ¾ cup buttermilk
  • 1 large egg
  • 2½ tablespoons butter, cut into pieces
  • 2½ tablespoons honey
  • 2¹⁄₃ cups bread flour
  • ¾ cup whole wheat or spelt flour
  • 3 tablespoons quinoa flour
  • 3 tablespoons barley flour
  • 3 tablespoons brown rice flour
  • 3 tablespoons instant potato flakes
  • 3 tablespoons cornmeal
  • 3 tablespoons rolled oats
  • 2 tablespoons gluten
  • 2 teaspoons salt
  • 1 tablespoon plus ½ teaspoon SAF yeast or 1 tablespoon plus 1 teaspoon bread machine yeast

 

Preparations

  1. Heat a deep, heavy saucepan over medium heat. Add the raw amaranth seeds to the pan and stir immediately using a natural-bristle pastry brush. Stir constantly as the amaranth pops, resembling popcorn. Remove the popped amaranth to a bowl to cool.
  2. In the bread machine’s pan, place all the ingredients, including the popped amaranth, according to the manufacturer’s recommended order. Add the popped amaranth with the dry ingredients.
  3. Choose the Whole Wheat cycle and set the crust to dark. Press the Start button to initiate the baking process. Note that the Delay Timer feature is not suitable for this recipe.
  4. As the baking cycle concludes, promptly remove the bread from the pan and gently transfer it to a cooling rack. Allow the loaf to cool down to room temperature before indulging in the delightful experience of slicing and savoring.
