INGREDIENTS:

  • 1 teaspoon cumin
  • 1 1/2 cups walnuts
  • 1 cup Basic Pepper Paste
  • 1 garlic clove
  • 1 cup toasted Sprinkling Crumbs
  • 2 tablespoons plus 1 teaspoon pomegranate molasses
  • 2 tablespoons plus 1 teaspoon lemon juice
  • Salt

 

PREPARATION:

  1. Preheat the oven to 350°F (175°C).
  2. Toast cumin seeds in a dry skillet over medium heat, swirling constantly to evenly toast. Toast until the seeds pop and release a savory aroma (about 3 minutes). Grind the toasted cumin finely with a pinch of salt using a mortar and pestle or a spice grinder.
  3. Spread walnuts on a baking sheet in a single layer and toast in the oven for about 4-6 minutes, stirring halfway through. They should be lightly browned and aromatic. Allow the walnuts to cool.
  4. In a food processor, combine cooled walnuts, garlic, and pepper paste. Blend until smooth.
  5. Add pomegranate molasses, lemon juice, and ground cumin to the mixture. Pulse until well combined. Adjust for salt and acidity.
  6. Store leftovers in the refrigerator for up to 5 days.

 

YIELD: Approximately 2 1/2 cups of Muhammara Spread
