Basil Pesto

INGREDIENTS:

  • 3/4 cup extra-virgin olive oil
  • 2 packed cups (about 2 big bunches) fresh basil leaves
  • 1 to 2 garlic cloves, finely grated or pounded with a pinch of salt
  • 1/2 cup pine nuts, lightly toasted and pounded
  • 3 1/2 ounces Parmesan, finely grated, plus more for serving (about 1 heaping cup)
  • Salt

 

PREPARATION:

  1. Begin by giving the fresh basil leaves a head start by chopping them slightly with a knife.
  2. Pour half of the olive oil into the blender or food processor to aid in breaking down the basil leaves into a liquid.
  3. Pulse the mixture, stopping to push down the leaves with a rubber spatula occasionally, until a fragrant and emerald-green basil oil is achieved.
  4. To avoid overblending, transfer the basil oil to a medium bowl. Add garlic, pine nuts, and Parmesan, stirring to combine. Taste and adjust the flavors.
  5. If the pesto is too thick, add a bit more olive oil or pasta water. Let the flavors meld for a few minutes, then taste and adjust again.
  6. Add enough olive oil to cover the sauce, preventing oxidation.
  7. Refrigerate covered for up to 3 days or freeze for up to 3 months.

 

YIELD: Approximately 1 1/2 cups of Basil Pesto
