Mexican Chicken & Rice Casserole

INGREDIENTS:

  • 1 1/2 cups SunRice Medium Grain White Rice
  • 3 cups chicken stock
  • 425g can mexibeans
  • 3 cups shredded roast chicken
  • 375g jar enchilada sauce
  • 250g tub sour cream
  • 4 shallots, thinly sliced, plus extra for garnish
  • 1 1/2 cups cheese blend

 

INSTRUCTIONS:

  1. Preheat your oven to 180°C and grease a baking dish with a capacity of 10 cups.
  2. Cook the SunRice Medium Grain White Rice according to the packet instructions, using chicken stock instead of water to infuse the rice with savory flavor.
  3. In a medium bowl, combine the cooked rice, shredded roast chicken, mexibeans, enchilada sauce, sour cream, thinly sliced shallots, and 1 cup of the cheese blend. Mix all the ingredients thoroughly to create a flavorful and creamy mixture.
  4. Pour the mixture into the prepared baking dish, spreading it evenly. Cover the dish with foil to keep the casserole moist and prevent excessive browning.
  5. Bake the casserole in the preheated oven for 20 minutes, allowing the flavors to meld and the ingredients to meld together.
  6. After 20 minutes, remove the foil and sprinkle the remaining cheese blend over the top of the casserole. Return the uncovered casserole to the oven and bake for an additional 5-10 minutes, or until the cheese is perfectly melted and turns a delicious golden hue.
  7. Once the cheese is melted and golden, remove the casserole from the oven. Garnish the casserole with extra thinly sliced shallots, adding a touch of freshness and color to the dish.
