INGREDIENTS:
- 3 cups self-raising flour
- ½ tsp baking powder
- 1 tsp sugar
- 60g Copha (solidified coconut oil)
- 300ml lemonade
- Plain flour, for kneading and rolling
- 1 egg, beaten
INSTRUCTIONS:
- Pre-heat your oven to 190°C to get it ready for baking.
- In a large bowl, combine the self-raising flour, baking powder, and sugar. Mix these dry ingredients together thoroughly.
- Grate the Copha (solidified coconut oil) over the flour mixture. Gently rub the Copha into the flour until the mixture resembles fine breadcrumbs. This will create a crumbly texture.
- Create a well in the center of the flour mixture. Pour in about 3/4 of the lemonade into the well. Mix the lemonade into the flour mixture until you achieve a firm yet slightly tacky dough. If needed, add more lemonade to achieve the desired consistency.
- Turn the dough out onto a lightly floured board. Gently knead the dough, being careful not to overwork it.
- Roll the dough out to a thickness of about 4cm, creating a circle.
- Using a floured cutter, cut out scones from the rolled-out dough. As needed, re-roll the dough to continue cutting out more scones.
- Place the cut scones onto a floured non-stick baking tray. Brush the tops of the scones with the beaten egg, which will give them a golden and shiny finish.
- Bake the scones in the pre-heated oven at 190°C for approximately 12-15 minutes. Keep an eye on them to ensure they’re baked to a golden color.
- Once baked, remove the scones from the oven and transfer them to a wire rack to cool slightly. For the best experience, serve the Lemonade Scones warm.
