Lemonade Scones

Indulge in the delightful simplicity of Lemonade Scones, a classic treat that brings together the comforting flavors of self-raising flour and the surprising addition of lemonade. These scones are a quick and easy option when you’re in need of a warm, freshly baked snack. MAKES 12 SLICES

 

INGREDIENTS:

  • 3 cups self-raising flour
  • ½ tsp baking powder
  • 1 tsp sugar
  • 60g Copha (solidified coconut oil)
  • 300ml lemonade
  • Plain flour, for kneading and rolling
  • 1 egg, beaten

 

INSTRUCTIONS:

  1. Pre-heat your oven to 190°C to get it ready for baking.
  2. In a large bowl, combine the self-raising flour, baking powder, and sugar. Mix these dry ingredients together thoroughly.
  3. Grate the Copha (solidified coconut oil) over the flour mixture. Gently rub the Copha into the flour until the mixture resembles fine breadcrumbs. This will create a crumbly texture.
  4. Create a well in the center of the flour mixture. Pour in about 3/4 of the lemonade into the well. Mix the lemonade into the flour mixture until you achieve a firm yet slightly tacky dough. If needed, add more lemonade to achieve the desired consistency.
  5. Turn the dough out onto a lightly floured board. Gently knead the dough, being careful not to overwork it.
  6. Roll the dough out to a thickness of about 4cm, creating a circle.
  7. Using a floured cutter, cut out scones from the rolled-out dough. As needed, re-roll the dough to continue cutting out more scones.
  8. Place the cut scones onto a floured non-stick baking tray. Brush the tops of the scones with the beaten egg, which will give them a golden and shiny finish.
  9. Bake the scones in the pre-heated oven at 190°C for approximately 12-15 minutes. Keep an eye on them to ensure they’re baked to a golden color.
  10. Once baked, remove the scones from the oven and transfer them to a wire rack to cool slightly. For the best experience, serve the Lemonade Scones warm.
