Lasagne roll-ups

Lasagne roll-ups take the classic flavors of lasagne and present them in a creative and elegant way. These delicious roll-ups are filled with a flavorful beef and tomato sauce, along with a creamy ricotta filling. This recipe offers a delightful twist on the traditional lasagne, perfect for a special dinner or any occasion where you want to impress your guests.

INGREDIENTS:

  • 1/3 cup olive oil
  • 500g beef mince
  • 1 brown onion, finely diced
  • 2 x 400g cans Ardmona Diced Tomatoes
  • 3 garlic cloves, crushed
  • 2 tbs Italian seasoning
  • 8 fresh lasagne sheets, cut in half lengthways
  • Salt and pepper

 

Ricotta Filling:

  • 500g ricotta
  • 1 egg, whisked
  • 1/3 cup flat leaf parsley, chopped, plus extra to serve
  • 3 1/2 cups three cheese blend

 

INSTRUCTIONS:

  1. Preheat the oven to 180°C (350°F).
  2. Heat 1 tablespoon of olive oil in a large non-stick frying pan over medium-high heat. Add the beef mince and cook, breaking it up with a wooden spoon. Once the meat is browned, add the finely diced onion and continue cooking until the onions are soft.
  3. Stir in one can of diced tomatoes, crushed garlic, and Italian seasoning. Allow the sauce to simmer on low heat, covered, for 10 minutes.
  4. While the sauce simmers, prepare the Ricotta Filling by combining ricotta, whisked egg, chopped flat leaf parsley, salt, pepper, and 3 cups of the three cheese blend in a medium bowl.
  5. Spread the remaining can of diced tomatoes evenly over the base of a 6-cup ovenproof baking dish.
  6. Lay the halved lasagne sheets in a single layer on a lined baking tray.
  7. Spread approximately ¼ cup of the Ricotta Filling over each lasagne sheet, followed by a heaped tablespoon of the meat sauce.
  8. Carefully roll up each lasagne sheet with the filling, and arrange the roll-ups in the baking dish, standing upright and nestled closely together.
  9. Pour any remaining meat sauce over the roll-ups and sprinkle the remaining cheese blend on top. Cover the baking dish with a piece of aluminum foil, ensuring it doesn’t touch the cheese.
  10. Bake in the preheated oven for 30 minutes, or until the pasta is cooked. Then, remove the foil and bake for an additional 5 minutes to achieve a golden and slightly crisp top.
  11. Once done, remove from the oven and allow the lasagne roll-ups to cool slightly before serving. Garnish with extra chopped parsley before serving.
