Key Lime Chicken

An unusual-and good!-combination of flavors.

YIELD: 4 servings, each with 4 grams of carbohydrates, a trace of fiber, and 44 grams of protein.

 

INGREDIENTS:

  • 1 cut-up broiler-fryer
  • 1/2 cup lime juice
  • 1/2 cup olive oil
  • 1 tablespoon grated onion
  • 2 teaspoons tarragon
  • 1 teaspoon seasoned salt
  • 1/4 teaspoon pepper

 

 

INSTRUCTIONS:

  1. Arrange the chicken pieces on the broiler rack, skin side down.
  2. In a bowl, combine the lime juice, oil, onion, tarragon, salt, and pepper, and brush the chicken well with the mixture.
  3. Broil the chicken about 8 inches from the flame for 45 to 50 minutes, turning the chicken and basting with more lime mixture every 10 minutes or so.
