Preparation Time: 10 minutes
Cooking Time: 35 minutes
Serves: 6

INGREDIENTS:

  • 1 ½ cups (250 g) macaroni
  • 2 tbsp. chopped fresh oregano
  • 2 cups (400 g) leftover roast vegetables (roast pumpkin, onion, carrot, sweet potato), diced
  • ⅓ cup (50 g) frozen peas
  • Salt and pepper
  • 4 eggs
  • ¾ cup (185 ml) milk
  • 2 ¼ cups (200 g) Perfect Italiano 4 Cheese Melt

INSTRUCTIONS:

  1. Begin by preheating your oven to 200°C (180°C fan-forced). Grease a 23 cm pie dish, ensuring it’s well-prepared to cradle your masterpiece.
  2. Cook the macaroni in a large saucepan according to the instructions on the packet. Once cooked, drain the macaroni and set it aside.
  3. In a mixing bowl, combine the cooked macaroni with the chopped fresh oregano, diced leftover roast vegetables, and frozen peas. Elevate the flavor profile by seasoning the mixture with a touch of salt and pepper, creating a harmonious blend of tastes.
  4. In a separate bowl, whisk together the eggs and milk until well combined. Add the Perfect Italiano™ 4 Cheese Melt to the mixture, ensuring that the cheese is beautifully integrated. Pour this creamy mixture over the macaroni and vegetable blend, tossing to ensure that every component is luxuriously coated.
  5. Transfer the mixture into the prepared pie dish, making sure it’s evenly distributed. Place the pie dish on a baking tray and carefully slide it into the preheated oven.
  6. Bake the Impossible Pasta Pie uncovered for 20 minutes, or until the top of the pie has achieved a sumptuous golden hue. To ensure the pie is fully set, cover it with foil and continue baking for an additional 5 minutes.
  7. Once the baking process is complete, remove the foil and allow the pie to rest for a brief 10 minutes. This rest will allow the flavors to meld and the pie to set.
