This is a great dish if you’re craving Italian food. If you use French cut green beans, they’ll remind you more of spaghetti.
YIELD: 4 servings, each with 19 grams of carbohydrates and 5 grams of fiber, for a total of 14 grams of usable carbs and 26 grams of protein.
INGREDIENTS:
- 1 package (12 ounces) frozen green beans
- 2 to 3 tablespoons olive oil
- 1 small onion, chopped
- 1 green pepper, diced
- 4 or 5 medium mushrooms, sliced
- 1 pound ground beef, turkey, or chicken
- Salt
- 1 can (4 ounces) plain tomato sauce
- 1 tablespoon Italian seasoning
- Parmesan cheese
INSTRUCTIONS:
- Cook the green beans according to package directions.
- While the beans are cooking, put the olive oil in a large, heavy skillet over medium heat and saute the onion, green pepper, and mushrooms until the onion is translucent.
- Add the ground beef, cook, and stir, crumbling the meat until all pinkness is gone. SaIt to taste.
- Add the tomato sauce and the Italian seasoning. Bring to a boil, reduce to a simmer, and cook for about 5 minutes. Do not overcook.
- Drain your green beans, pour the meat sauce over them, top with Parmesan, and serve.
