INGREDIENTS:
- 1 1/2 pounds lean ground beef
- 1/2 cup onion, finely diced
- 10 ounces frozen spinach, thawed and drained
- 1 package (8 ounces) cream cheese, softened
- 1/2 cup heavy cream
- 1/2 cup shredded Parmesan cheese
- Salt and pepper
INSTRUCTIONS:
- Preheat the oven to 350°F. Spray a large casserole with nonstick cooking spray.
- In a large skillet, brown the ground beef and onion. Add the spinach and cook until the meat is done.
- In a bowl, combine the cream cheese, heavy cream, Parmesan, and salt and pepper to taste. Mix well.
- Combine the cream cheese mixture and the meat mixture, and spoon into the prepared casserole. Bake, uncovered, for 30 minutes or until bubbly and browned on top.
