INGREDIENTS | YIELD: 2 CUPS
- 1 cup sugar
- Pinch salt
- 1½ cups toasted nuts
DIRECTIONS
- Prepare a baking sheet with either a Silpat liner, parchment paper, or aluminum foil. Set aside.
- Heat the sugar and salt in a saucepan over medium heat. Carefully stir the sugar after it begins to brown at the edges, taking care not to splash.
- Once the caramel is liquid and uniform, add the nuts, and quickly stir to coat.
- Remove from heat and pour onto the prepared baking sheet, spreading as evenly as possible.
- Allow to cool completely, then break into small pieces by hand with a rolling pin or in a food processor. Store in an airtight container.
Adding Nuts to Caramel
Stirring the nuts into the hot caramel can be a bit arduous. Try adding them just after they have been toasted, while still warm. You’ll find the process much easier.
