Crunchy Caramelized Nuts

Talk about crunch! No matter which variety of nuts you opt to incorporate into this simple recipe, you’ll be rewarded with flavorful crunch in each and every bite.

INGREDIENTS | YIELD: 2 CUPS

  • 1 cup sugar
  • Pinch salt
  • 1½ cups toasted nuts

 

DIRECTIONS

  1. Prepare a baking sheet with either a Silpat liner, parchment paper, or aluminum foil. Set aside.
  2. Heat the sugar and salt in a saucepan over medium heat. Carefully stir the sugar after it begins to brown at the edges, taking care not to splash.
  3. Once the caramel is liquid and uniform, add the nuts, and quickly stir to coat.
  4. Remove from heat and pour onto the prepared baking sheet, spreading as evenly as possible.
  5. Allow to cool completely, then break into small pieces by hand with a rolling pin or in a food processor. Store in an airtight container.

 

Adding Nuts to Caramel
Stirring the nuts into the hot caramel can be a bit arduous. Try adding them just after they have been toasted, while still warm. You’ll find the process much easier.
