Fruity Whipped Cream

Adding puréed fruit to whipped cream is an ingenious way to gain added flavor to a gorgeous sorbet or to use as a needed garnish on a fancier dessert plate. Use your imagination!

INGREDIENTS | YIELD: 1 CUP

  • ⅔ cup heavy cream
  • ¼ cup fresh berries, cherries, or soft fruit puréed
  • 2–3 tablespoons confectioner’s sugar
  • 1 teaspoon vanilla extract

 

DIRECTIONS

  1. Whip the cream to soft peaks.
  2.  Stir the puréed berries into the cream.
  3.  Add in the confectioner’s sugar and vanilla, and whip until well combined. Do not overbeat.
  4. Add to sealed container (or piping bag). Keep refrigerated until needed.

 

Proper Fruit Choices
Raspberries, blueberries, or blackberries are excellent choices for this recipe, as are cherries and peaches. Strawberries contain a lot of water, so if choosing to use them, first chop them and allow them to drain before using.
