Along with wild rice, cranberries are a popular food in Minnesota. Here is our version of the traditional cranberry sweet bread. It is as pretty as it is delicious.
MAKES: 1 loaf
INGREDIENTS:
- 1/4 cup butter, room temperature
- 1/2 cup honey
- I cup orange juice
- 1 egg, slightly beaten
- 2 tablespoons grated orange rind
- 2 cups whole wheat flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup chopped nuts—walnuts or pecans
- 1 cup cranberries, coarsely chopped
INSTRUCTIONS:
- Cream butter. Add honey and beat until light and creamy. Add orange juice, egg, and orange rind, beating until well mixed.
- In a separate bowl, combine dry ingredients. Stir into wet ingredients just until combined. Stir in nuts and cranberries.
- Turn dough into buttered loaf pan. Bake in a preheated 350° oven for 50 minutes to 1 hour. Bread will be done when a cake tester inserted in the middle comes out clean. Let bread stand in pan for 10 to 15 minutes, and then turn out onto a cooling rack. Cool completely before slicing.
