This tropical-tasting bread makes us think we’re in a faraway land with the ocean at our feet! The coconut creates a moist, chewy loaf that is delicious and exotic tasting.
YIELDS: 1 loaf
INGREDIENTS:
- 3 tablespoons butter
- 1/2 cup honey
- 2 eggs
- 1 teaspoon vanilla
- 1/4 cup fresh orange juke
- 2 cups flour
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsweetened coconut
- 1 tablespoon grated orange rind (optional)
INSTRUCTIONS:
- Cream butter. Beat in honey until smooth and creamy. Add eggs and beat until incorporated. Add vanilla and orange juice.
- In a separate bowl, combine dry ingredients. Stir into wet ingredients. Fold in coconut and orange rind. Pour into a buttered loaf pan.
- Bake in a preheated 350° oven for 45 to 50 minutes. Bread is done when a cake tester inserted in the center comes out clean. Let loaf cool for 10 to 15 minutes, then turn out onto a rack. Cool completely on the rack before slicing.
