All the gravy recipes include fat i.e. butter or oil, cooked with flour to make a roux which thickens the gravy. In bacon gravy the fat used is bacon grease. The trick is that the roux should be hot enough but not burned for a rich flavor and darker color. Ingredients:
- 2 cups milk
- 2 Tablespoons flour
- 1/2 teaspoon ground black pepper
- 3/4 teaspoon salt
- 6 pieces bacon, cooked until crisp (reserve 2 Tablespoons bacon grease in skillet)
- 1-2 Tablespoons cold butter
Instructions:
- Cook bacon in large heavy bottom skillet until crispy. Remove cooked bacon to paper towels to absorb extra grease. When bacon is cool, crumble it into small pieces and set aside.
- Leave 2 tablespoons of bacon grease in skillet.
- In a separate bowl, whisk together milk, flour, salt and pepper. Pour the milk/flour mixture into the skillet with remaining bacon grease.
- Add crumbled bacon pieces. Heat mixture on medium heat while stirring constantly until it comes to a boil; reduce heat to medium-low, and continue cooking and stirring, until gravy has thickened which will take about 5-6 minutes.
- Serve and enjoy with buttermilk biscuits for your breakfast.
Note: Store the leftover gravy in a jar or closed container in refrigerator for up to 4 days. When you want to use it again, reheat on stove in a saucepan over medium-low heat until warmed through.
