Cabbage Slaw Recipe

Cabbage slaw is a European cuisine basically served as a side dish. It is simple, vegan and quick recipe to serve alongside mains. It is a great make ahead dish. The vegetables can be shredded a day or two in advance and kept in a resealable bag in the refrigerator. The dressing will also stay fresh in the refrigerator if kept covered. When you are ready, combine the cabbage with the dressing.

This simple healthy slaw comes together within minutes with few simple ingredients and turns out great and delicious. This coleslaw is packed with fresh flavors and will go great with beef, or with your hotdog and hamburger. It is very easy to make at home. While choosing the cabbage to use you can go with either red or green or a combination of both to give a vibrant look to your coleslaw. The type of cabbage you choose won’t really effect the procedure. The dressing of this coleslaw is creamy, fresh and flavorful with mayonnaise as the base combined with apple cider vinegar, Dijon mustard and seasoned with salt and pepper. Try out this quick, easy, flavorful and healthy coleslaw at home and enjoy with your favorite dish.

Preparation time: 15 minutes

Ingredients:

  • ½ Napa cabbage or regular green cabbage
  • 3 regular size carrots, peeled and shredded
  • 2 green onions
  • 1 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons Dijon mustard
  • ½ teaspoon salt
  • ¼ teaspoon pepper

Instructions:

  • Remove any tattered or bruised outer leaves of cabbage then cut it in half and remove the core. Slice cabbage as thin as possible. You can use a knife and hand shred the cabbage or you could use food processor attachment for it.
  • Transfer the shredded cabbage to a large bowl.
  • Thinly slice the carrots and green onions. Add in the bowl with cabbage and toss to mix.
  • To make the dressing, take a small bowl and add mayonnaise in it. Stir in vinegar, mustard and season with salt and pepper. If you want to add some sweet touch, stir in 1 tablespoon sugar.
  • Pour 1/3 cup of dressing over the vegetables mixture and mix. If cabbage slaw is dry still then add more dressing.
  • Ready to serve as side to your favorite meal.

 

Note: if you are running short on time, instead of shredding and slicing at home you can buy pre shredded cabbage coleslaw bags from grocery store. The coleslaw dressing can sit in refrigerator, covered for days.You can use it as a dip, topping of sandwiches or side with beef or pork.
