  • 400g can chickpeas, drained and rinsed
  • 2 small garlic cloves, peeled
  • 1/4 cup firmly-packed coriander leaves
  • 1/4 cup extra virgin olive oil
  • 2 tbs lime juice
  • 1 tbs tahini
  • 1/2 tsp ground cumin
  • 2 ripe avocados, seeds and skin removed, chopped
  • 1 tbs water
  • Toasted pita bread, to serve

 

INSTRUCTIONS:

  1. Begin by using a food processor to blend the drained and rinsed chickpeas, peeled garlic cloves, firmly-packed coriander leaves, extra virgin olive oil, and lime juice. Blend the ingredients until a smooth consistency is achieved.
  2. Add the tahini and ground cumin to the mixture in the food processor. Now, introduce the chopped ripe avocados to the mix. Process everything again until well combined, adjusting the texture by adding a tablespoon of water if needed. This addition will help achieve your desired consistency.
