Asian Ginger Slaw

Asian Ginger Slaw is a fresh and crunchy salad made with shredded cabbage, carrots, and other vegetables, dressed with a tangy and slightly sweet ginger dressing. It often includes other ingredients such as bell peppers, snow peas, and edamame. The dressing typically consists of ginger, soy sauce, rice vinegar, and sesame oil, and sometimes includes honey or brown sugar for sweetness. Asian Ginger Slaw is a great side dish for grilled meats or fish, and can also be served as a light and healthy lunch or dinner.

YIELDS: 8 servings, each with 4 grams of carbohydrates and 1 gram of fiber, for a total of 3 grams of usable carbs and 1 gram of protein.

 

INGREDIENTS:

  • 4 cups finely shredded napa cabbage
  • 1/4 cup shredded carrot
  • 2 scallions, thinly sliced
  • 1/4 cup pale, inner celery stalk, thinly sliced
  • 1/4 cup mayonnaise
  • 1 teaspoon grated fresh ginger
  • 2 tablespoons rice vinegar
  • 1 teaspoon soy sauce
  • 1 teaspoon Splenda

 

 

INSTRUCTIONS:

  1. Combine the cabbage, carrot, scallions, and celery in a salad bowl.
  2. In a separate bowl, combine the mayonnaise, ginger, vinegar, soy sauce, and Splenda. Beat together until smooth, pour over the vegetables, toss, and serve.
