Confetti UnSlaw

This may be a raw cabbage salad, but it’s not much like coleslaw. Plus, it’s utterly gorgeous on the plate.

YIELDS: 8 servings, each with 6 grams of carbohydrates and 2 grams of fiber, for a total of 4 grams of usable carbs and 1 gram of protein.

 

INGREDIENTS:

  • 2 cups shredded green cabbage
  • 2 cups shredded red cabbage
  • 1/2 sweet red pepper, chopped
  • 1/2 green pepper, chopped
  • 4 scallions, sliced, including the crisp part of the green
  • 1/3 cup grated carrot
  • 1 small celery rib, thinly sliced
  • 2 tablespoons minced fresh parsley
  • Creamy Garlic Dressing

 

CREAMY GARLIC DRESSING:

  • 1/2 cup mayonnaise
  • Pinch each of pepper and salt
  • 8 cloves garlic, crushed
  • 2 tablespoons olive oil
  • 2 tablespoons wine vinegar

 

 

INSTRUCTIONS:

  1. Dressing: Combine all the ingredients well, and store in the refrigerator, in a container with a
    tight-fitting lid.
  2. Just cut up and combine all these vegetables, and toss with the Creamy Garlic Dressing.
