INGREDIENTS:

  • 1 medium eggplant
  • 1 teaspoon ground coriander
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • 1 cup crushed panko breadcrumbs
  • 1 large egg
  • 2 tablespoons water
  • Oil for misting or cooking spray

 

INSTRUCTIONS:

Prepare the Eggplant:

  1. Peel the eggplant and cut it into fries that are approximately ⅜- to ½-inch thick.

 

Preheat the Air Fryer:

  1. Preheat your air fryer to 390°F (200°C).
