ANZAC Biscuits

Step back in time and indulge in the classic charm of ANZAC Biscuits, a beloved treat with a history that dates back to World War I. These biscuits are a tribute to the Australian and New Zealand Army Corps (ANZAC) soldiers who enjoyed these sweet and hearty delights during their service. Packed with oats, coconut, and golden syrup, ANZAC Biscuits are a delightful combination of flavors and textures that have stood the test of time. INGREDIENTS:

  • 125g (½ block) Fairy margarine
  • 3 tbs golden syrup
  • ½ tsp bicarb soda
  • 2 tbs hot water
  • 150g (1 cup) plain flour, sifted
  • 110g (½ cup) caster sugar
  • 90g (1 cup) desiccated coconut
  • 90g (1 cup) rolled oats

 

INSTRUCTIONS:

  1. Preheat your oven to 150°C and prepare for baking by lining 2 baking trays with baking paper.
  2. In a small saucepan, melt the Fairy margarine and golden syrup over low heat. As they melt together, they create a rich and flavorful base for your biscuits.
  3. In a separate small bowl, dissolve the bicarb soda in the hot water. This mixture will help create the biscuits’ texture and assist with their rise.
  4. In a large mixing bowl, combine the dry ingredients – plain flour, caster sugar, desiccated coconut, and rolled oats. Mix these ingredients together to ensure an even distribution of flavors.
  5. Pour the melted Fairy margarine and golden syrup mixture into the center of the dry ingredients. Add the bicarb soda and hot water mixture as well. With a spoon or spatula, thoroughly mix all the ingredients until they come together into a sticky dough.
  6. Using heaped tablespoons of the mixture, roll portions of the dough and place them on the prepared baking trays. Once placed, gently flatten the dough with the palm of your hand until each portion is approximately 1cm thick.
  7. Slide the baking trays into the preheated oven and bake the ANZAC Biscuits for about 10–12 minutes, or until they turn a lovely golden brown. The baking time ensures a perfect balance between a soft interior and a slightly crisp exterior.
  8. Once baked to perfection, carefully remove the ANZAC Biscuits from the oven and transfer them to a cooling rack. Allowing them to cool ensures that they set properly and develop their delightful texture.
