INGREDIENTS:

  • 4 boneless, skinless chicken breast halves, cut horizontally in half and pounded to a ¼-inch thickness

  • 3 tablespoons vegetable oil

 

INSTRUCTIONS:

  1. Season the chicken cutlets with salt (omit the salt if using brined chicken) and freshly ground black pepper. Lightly dredge the cutlets in the all-purpose flour, shaking off any excess flour. Transfer the coated cutlets to a plate or cutting board.
  2. In a 12-inch heavy-bottomed stainless steel skillet or sauté pan, heat 1½ tablespoons of vegetable oil over high heat until it begins to smoke. Add half of the chicken cutlets to the hot pan and cook without moving them until the bottoms become well browned, approximately 2½ minutes. Carefully flip the cutlets and cook the second side for about 30 seconds, or until the chicken is cooked through. Transfer the cooked cutlets to a large plate and tent with aluminum foil to keep them warm. Add the remaining 1½ tablespoons of vegetable oil to the pan, heat until smoking, and cook the remaining cutlets in the same manner.
