INGREDIENTS:

  • 250g Copha
  • 3 cups Kellogg’s Rice Bubbles®
  • 1 cup desiccated coconut
  • ¾ cup icing sugar, sifted
  • 1 cup powdered milk
  • 1 package of dried mixed fruit
  • Glace cherries for topping

PREPARATION:

  • Cooking Time: 15 minutes
  • Makes: 24 pieces

PREPARATIONS:

  1. Combine the dry ingredients (Rice Bubbles, desiccated coconut, sifted icing sugar, powdered milk, and dried mixed fruit) in a mixing bowl.
  2. Melt Copha slowly over low heat until it’s completely liquified.
  3. Allow the melted Copha to cool slightly and then pour it onto the dry ingredients in the mixing bowl.
  4. Mix the ingredients thoroughly until they are well combined and coated with the Copha mixture.
  5. Working quickly, spoon the mixture into paper patty cases or press it into a lamington tin, spreading it evenly.
  6. Place the filled patty cases or tin in the freezer and let it set for about 15 minutes. Once set, transfer it to the refrigerator for storage.
  7. Once the White Christmas is chilled and firm, remove it from the patty cases or tin.

ASSEMBLY:

  1. Cut the White Christmas into rectangular fingers, creating bite-sized portions.
  2. Top each piece with a glace cherry for a festive touch.
