Walleye Sauteed in Almond Meal

Many customers demand a phone call when we serve Walleye Sauteed in Almond Meal. We like to create a summer feast and serve it with sweet corn, potato salad, sliced tomatoes, and lemon wedges. The breading adds to both the flavor and the size of the serving, making a 4- ounce portion plenty for each person.

SERVES: 4 to 6

 

INGREDIENTS:

  • 1 cup ground almonds
  • rind of1 lemon, finely grated
  • 1/2 teaspoon salt
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon black pepper
  • flour for rolling fillets
  • 1 egg, beaten
  • 1 1/2 pounds walleye fillets
  • 2 tablespoons butter, preferably clarified
  • 2 tablespoons vegetable oil

 

 

INSTRUCTIONS:

  1. Combine almonds, lemon rind, salt, and cayenne and black pepper in a shallow bowl. First roll fillets in the flour, then dip them in the beaten egg, followed by the almond meal, turning to coat both sides well for all 3 coatings.
  2. Heat butter and oil until very hot in a large skillet. Reduce heat, and saute fillets at medium heat until fillets are crispy and brown. This will take approximately 4 minutes for each side.
