INGREDIENTS:

  • 6 large, thin veal slices
  • 2 tablespoons Dijon mustard
  • 6 slices ham
  • 1 cup grated Gruyère cheese
  • 6 hard-boiled eggs, peeled
  • 2 tablespoons peanut oil
  • 1 shallot, minced
  • 1 tomato, quartered
  • 1 carrot, peeled and sliced
  • 1 bouquet garni
  • Pepper and salt
  • 1 pound white mushrooms, sliced (optional)
  • 2 tablespoons cognac
  • 1 cup crème fraiche

 

INSTRUCTIONS:

  1. Spread 1 teaspoon of mustard on each piece of veal.
  2. Place a slice of ham on top of the mustard, followed by grated cheese.
  3. Place a hard-boiled egg on the cheese and wrap the veal around the egg to form a paupiette. Tie with kitchen twine.
  4. In a deep skillet, heat oil and sauté the paupiettes with shallot until the meat is browned on all sides.
  5. Add carrot, tomato, bouquet garni, pepper, and salt to the skillet. If using mushrooms, add them as well.
  6. Pour enough water into the skillet to come halfway up the paupiettes.
  7. Cover and cook over low heat for 45 minutes.
  8. Remove the paupiettes from the skillet and cut each one in half lengthwise using a sharp knife.
  9. Discard the kitchen twine and arrange the halves cut side up for an appealing presentation.
  10. Taste the sauce and adjust the seasoning as needed.
  11. Stir in cognac and crème fraiche to the sauce.
  12. Transfer the sauce into a sauceboat and serve separately.
  13. Serve the veal paupiettes with the sauce and enjoy!
