INGREDIENTS:
- 1¼ cups Ensure® vanilla powder
- 4 eggs
- 2½ cups full cream milk
- 8 slices white breAd, crusts removed
- cut in half (diagonally)
- 40g butter, softened
- ½ cup sultanas
- 200ml thickened cream
- 1 tsp cinnamon
- ½ tsp nutmeg
- 1 tsp vanilla essence
- 2 tbsp brown sugar
INSTRUCTIONS:
- Preheat oven to 180°C.
- Combine milk, cinnamon, nutmeg and vanilla essence in medium saucepan. Stir over medium heat and cook for 5 minutes. Allow to cool.
- In a large bowl whisk eggs. Add to warm milk mixture and whisk. Add Ensure® powder and sultanas and stir until combined.
- Lightly butter each side of bread and place bread in overlapping layers in casserole dish. Pour egg mixture over bread and sprinkle with sugar.
- Bake for 45 minutes, or until custard is set. Allow to cool slightly before serving. Serve with thickened cream or ice cream.
