Vanilla Bread and Butter Pudding

SERVES: 10.

 

INGREDIENTS:

  • 1¼ cups Ensure® vanilla powder
  • 4 eggs
  • 2½ cups full cream milk
  • 8 slices white breAd, crusts removed
  • cut in half (diagonally)
  • 40g butter, softened
  • ½ cup sultanas
  • 200ml thickened cream
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • 1 tsp vanilla essence
  • 2 tbsp brown sugar

 

 

INSTRUCTIONS:

  1. Preheat oven to 180°C.
  2. Combine milk, cinnamon, nutmeg and vanilla essence in medium saucepan. Stir over medium heat and cook for 5 minutes. Allow to cool.
  3. In a large bowl whisk eggs. Add to warm milk mixture and whisk. Add Ensure® powder and sultanas and stir until combined.
  4. Lightly butter each side of bread and place bread in overlapping layers in casserole dish. Pour egg mixture over bread and sprinkle with sugar.
  5. Bake for 45 minutes, or until custard is set. Allow to cool slightly before serving. Serve with thickened cream or ice cream.
