Need an easy dish for a seriously steamy summer day? This no-cook turkey dish, is inexpensive and easy to pull off. The creamy, rich tuna-anchovy sauce gets whirred together in a food processor and spooned on top. Serve it alongside greens topped with ricotta salata or feta cheese.
SERVES: 4
INSTRUCTIONS:
- 1 pound sliced roasted turkey breast
- 1 cup mayonnaise
- One 5-ounce can tuna, drained
- One third 2-ounce can flat anchovies, drained (2 anchovies)
- 1½ tablespoons fresh lemon juice, plus 1 lemon, sliced, for garnish
- ¼ teaspoon paprika
- 1½ tablespoons capers, rinsed
INSTRUCTIONS:
- Arrange the turkey slices on a platter.
- In a blender or food processor, mix the mayonnaise, tuna, anchovies, lemon juice, paprika, and 1 tablespoon capers. Add more lemon juice to taste, if necessary. Spoon the sauce over the turkey.
- Garnish with the remaining ½ tablespoon capers and lemon slices and serve.
