Thai Chile Sauce

INGREDIENTS:

  1. 2 tablespoons freshly squeezed lime juice
  2. 2 tablespoons nam pla (Thai fish sauce)
  3. 1 teaspoon minced garlic
  4. 1/4 teaspoon minced hot fresh chile (like Thai or jalapeño), cayenne, or hot red pepper flakes, or to taste
  5. 2 teaspoons sugar
  6. 1 tablespoon minced dried shrimp (optional)
  7. 1 tablespoon finely shredded carrot (optional)

 

INSTRUCTIONS:

  1. Combine all the ingredients in a bowl and stir until the sugar dissolves. Taste and adjust the seasonings according to your preference. If you prefer a spicier sauce, you can add more hot chiles or pepper flakes. If desired, you can also add minced dried shrimp for an additional layer of flavor or finely shredded carrot for a touch of sweetness.
  2. Let the sauce rest for a few minutes before serving to allow the flavors to meld together. You can also refrigerate it for up to a day, but remember to bring it back to room temperature before using.
