Ginger-Scallion Sauce

Ginger-Scallion Sauce is a classic accompaniment to various dishes in Chinese cuisine. INGREDIENTS:

  • 1/4 cup minced fresh ginger
  • 1/2 cup chopped scallion
  • 1 clove garlic, minced
  • 1 teaspoon salt, or more to taste
  • 1/2 cup peanut oil or neutral oil, like grapeseed or corn

 

INSTRUCTIONS:

  1. In a heatproof bowl, thoroughly mix the minced ginger, chopped scallion, minced garlic, and salt together.
  2. Put the oil in a small saucepan or skillet and heat it over high heat until it starts to smoke.
  3. Carefully pour the hot oil over the ginger-scallion mixture. Mix well to combine all the ingredients.
  4. Serve the Ginger-Scallion Sauce immediately, or refrigerate it for up to 3 days. If refrigerated, bring it back to room temperature before serving.

 

VARIATIONS:

  • Garlic-Scallion Sauce: For a simpler but more potent flavor, increase the amount of garlic to 1/4 cup and eliminate the ginger.
  • Chile-Scallion Sauce: If you prefer some heat in your sauce, add 3 tablespoons (or to taste) of your favorite finely chopped fresh chile from the chart on page 71. Increase the garlic to 2 large cloves and reduce the ginger to 1 tablespoon or omit it entirely.
