Summer Pudding

INGREDIENTS:

  • 2/3 cup granulated sugar
  • 8 to 10 slices Brioche (1/4 inch thick)
  • 1 cup heavy cream, lightly whipped
  • 1 teaspoon confectioners’ sugar

 

PREPARATIONS:

  1. In a saucepan, combine berries and sugar, bring to a boil, and cook for 1 minute before removing from heat.
  2. Line a medium-sized glass or ceramic bowl, or smaller soup bowls or cups, with brioche slices, reserving some for the top.
  3. Pour berries and juice into the mold(s), then cover with reserved brioche.
  4. Place a plate on top of each mold, weight with cans, and refrigerate overnight.
  5. Unmold pudding onto a cutting board or platter, or spoon portions into bowls.
  6. Top with reserved berry juice and whipped cream, and dust with confectioners’ sugar.

 

SPECIAL INSTRUCTIONS:

  • The pudding sets best when chilled overnight, allowing the flavors to meld and the texture to develop.
